Rainbow Road Shortcut

On Rainbow Road, while you are going down the first slope AT the beginning of the race, at midway of the slope, steer to the left side and do a hop over the fence. If done correctly, you will hop over the fence, and if you keep the joystick forward while your in the air, you will land on the track you see in front of you. Then you just keep going. This shortcut cuts out about 45 seconds of the race. You can use this shortcut on every lap. Be warned, this doesn't always work as planned.
